Healthy Ham Fried Rice

I am always looking for quick and easy meals. With a busy family and a baby who somehow decides that right around dinnertime is her meltdown time, it can be tough. Quick, simple, easy and healthy. That’s my motto. This meal promises to deliver all of that in one. You will love this, although my husband says that he loved it, but next time he wants it with orange chicken. Somehow my meal gave him a craving for it. The kids asked for it again, and I loved the ease and convienence of it.

On a side note, I’m up to 6.5 miles and averaging 10:30 minute miles. Not great, but decent. I”m just working and training hard fora half marathon at the end of the summer. It seems crazy to think that I will be running 13 miles by the end of summer. Right now it just seems so impossible.

Healthy Ham Fried Rice

1 cup cooked brown rice

2 eggs, lightly beaten

2/3 cup ham, cooked and diced

1/4 cup chopped green onions

1/2 tsp garlic powder

Pinch of chili pepper

Pinch of black pepper

Pinch of ground ginger

2 teaspoons low sodium soy sauce (try Kikkomans) or Bragg’s Liquid Aminos.

1/4 cup each vegetables of your choice:

Carrots (diced)


Sugar Snap Peas


Water chestnuts

Frozen or fresh peas

1. Cook the rice according to package directions in a rice cooker or stovetop. Once rice is cooked, set aside to cool and place a medium  frying pan on the stovetop.

2. Place the lightly beaten eggs in the medium frying pan. Heat to medium and stir until eggs are scrambled. Set eggs aside on a seperate plate.

3. Add the vegetables, ham, soy sauce and spices to the pan and stir and cook until vegetables become crisp tender. In a large bowl, add the rice, scrambled eggs and vegetables, stirring until fully mixed. Serve with additional soy sauce or liquid aminos if desired.
