Cheesy Chicken and Chives Ravioli

Life is getting expensive. We added a little baby to the family, and with it came lot’s of expenses. $40 a week in formula, $10 a week in diapers, clothes (seriously, how many bibs does this kid need? We go through at least 12 a day!) Suddenly my food budget is dwindling. But I won’t sacrifice the health of my family–especially with cold and flu season coming. You can make a good, quality meal like this for just a few dollars if you shop smart. Today I took a break to show you one of our meals and how I plan my meals around what is on sale. This week, I made a meal that I adapted from Better Homes and Gardens.

I’m asked a lot for quick and easy family meals. This is one that has just a few ingredients, and you can make a larger batch, using half the batch now for dinner and freeze the remaining half for a later meal. It will take some preparation time, so make sure if you work that you make this at a time when you have a lot of time to prep. Plan on about 50 minutes.

The starting lineup of ingredients you will need:

6 ounces raw turkey or chicken: Reg price: $2/lb ($1.69/lb at Sunflower Market’s 40% off ground sale) = $1.69

1 8oz container chive and onion cream cheese: $2.29 (I opted for reduced instead of regular fat cream cheese and used a $1/1 coupon here) = $1.29

1/4 cup shredded carrots: $1.18 ( I price matched carrots at Walmart for .88/bag) = .88

Wonton wrappers (I used Nasoya brand from Sunflower Market) = $2.99-$.75/1 coupon = $2.24

Muir Glen Spaghetti Sauce: $2.50 (on sale) – $1/1 coupon= $1.50


Total before coupons: $10.94

Price per serving: $2.74

Total after coupons: $7.60

Price per serving: $1.90

Does shopping sales and using coupons help? You bet! I’m sure I’ll have a few write and say, ‘but you only saved $3.34 total, and only .84/serving! Lot of work, not a big difference.” Yes, but over a week’s time if I save an average of $2-3 per meal I save $14-21 per week. If I continue to do that I save $60-90 per month. That’s when it get’s easier to see the savings. And that was only dinner!

Cheesy Chicken and Chives Ravioli


1 package won ton wrappers

1 8 oz tub reduced fat chive and onion cream cheese

6 oz ground chicken or turkey

1/4 cup shredded carrots

1 jar spaghetti or pasta sauce

In a medium mixing bowl, stir together the chicken or turkey, carrots, and cream cheese.

Place 1 tablespoon of the mixture in the center of each wonton wrapper. Brush the edges of the wonton wrapper with water. Fold each wonton wrapper over to the opposite corner to form a triangle.

To serve now: In a large saucepan, heat water to boiling. Add the ravioli, reduce heat and cook for 3-4 minutes (5-6 minutes if ravioli is frozen) or until meat is no longer pink. Using a slotted spoon remove ravioli and place on a plate covered with a paper towel. Place desired amount of ravioli in a bowl or on a plate and cover with spaghetti sauce. Garnish with basil or parmesan if desired.

To freeze and serve later: Place ravioli in a freezer bag, remove air and freeze for up to three months. To serve, use directions above.
