Caramel Apple Sandwich
By October, the kids have pretty well had it with peanut butter and jelly. I personally had a five year hiatus from peanut butter and jelly. The mere thought of a peanut butter and jelly sandwich made me cringe. My mom packed them in my lunch for five years straight in elementary school. Or at least it seemed that way. It was three years for sure though.
So I can totally understand my kids not wanting plain ol’ peanut butter and jelly everyday.
With fall in the air and apples coming off our tree, I came up with this caramel apple sandwich. It’s delicious, has plenty of protein, and is a great twist on traditional peanut butter and jelly.
2 slices of bread
1 tsp lemon juice
1 cup water
In a small bowl, mix together lemon juice and water. Slice an apple thinly (slightly thicker than a potato chip). Place the apple slices in the lemon water. Meanwhile, spread peanut butter thinly on one side of each piece of bread. Remove the apples from the water and pat dry. Arrange one layer of apples on the sandwich evenly. Drizzle caramel syrup on top, than place the other side of bread on top. Cut the sandwich diagonally and serve with remaining apples slices on the side.
