Lemonade with Goji Berries and Honey

I forgot how hot it is this time of year to walk to and from the school. When the kids and I arrived home, we were so thirsty! Our neighbors had put up a lemonade stand, and had made this delicious goji berry, honey and lemonade mix. As we talked she told me how the kids had squeezed and juiced the lemons themselves to put in their lemonade.

The lemonade was a steal at only 12 cents for plain lemonade and 25 cents for lemonade with goji berries. It was the most delicious lemonade I had ever had!

To me, goji berries are similar looking in nature to pomegranates, although more oval in shape. And a little more sour in taste. You can use fresh or dried goji berries in this recipe. I used dried as fresh weren’t available at my local health food store. If you live where I do, these are NOT available at Sunflower, but at Good Earth and Whole Foods stores. If you don’t live in an area that sells them, substitute fresh or dried pomegranates instead.

1 cup goji berries (or pomegranates)

1 cup raw honey or raw agave

1 cup fresh lemon juice (approximately 3-4 lemons)

6 cups cold water

Fill a pitcher with the 6 cups of cold water and 1 cup lemon juice. Place the berries in and allow them to sink to the bottom. If using dried berries, allow them to sit in the water for approximately 10 minutes before mixing in the honey or agave. Pour in the honey or agave slowly and begin to stir it into the lemonade mixture. Continue stirring until all the honey has been incorporated. You will also want to stop stirring and mash the berries several times while mixing with your wooden spoon to allow some of the flavor of the berry to be blended in with the lemonade mixture.

Pour into a cup filled with ice and enjoy!!
