Grilled Peach and Chicken Salad w/Poppyseed Dressing
One of my favorite salad dressings is Brianna’s Poppyseed. It pairs so well with so many fruits. With the peaches in season and popping up at my local Farmer’s Markets and fruit stands, I was excited to make a salad that had one of my favorite fruits of the summer and fall.
This salad is delicious! Pairing fresh grilled chicken and peaches with the sweet flavor of poppyseed dressing makes this salad one of the best salads of the summer!
This weekend was a lot of fun. We spent it in Saint George with family. The weather was nice and beautiful (a little cloudy and rainy at times) but absolutely gorgeous. A lot of time was spent in the pool with the kids, and I’m tanner than when I left. So that’s good. We were mostly there to help out my husband’s grandfather who broke his toe several weeks ago. But my husband’s grandmother is a delicious cook too! We enjoyed a delicious turkey meatloaf, chicken, carrots and onions with broth, and a delicious flatbread pizza. With all that good food, I was looking to eat a little bit light tonight.
2 cups spinach lettuce (I used Earthbound Organic green’s mix from Costco)
2 oz grilled chicken breast, cut into strips
1 whole peach, sliced and grilled
2 tbsp pecans or walnuts
2 tbsp crumbled feta cheese
1/8-1/4 cup red onion, chopped (optional)
Brianna’s poppyseed dressing, to taste
In a bowl, or on a salad plate place the two cups of washed and dried spinach or salad mix. On top of the salad, place the grilled chicken breast. Top the remainder of the salad with grilled peaches, feta cheese, walnuts or pecans, and toss with the poppyseed dressing to taste. Serve chicken and peaches warm or cold. Serves 1-2.
