Quinoa Fruit Salad

I’ve had my eye on this salad for almost a month now. It first appeared on the blog, FabFrugalFood. I was intrigued when I saw the combination. It’s not too often that you see someone attempting to mix quinoa with fruit. But this one did. And I wanted to try it. The blog originally posted it as a Fourth of July recipe. But I love it as a summertime recipe too!

This meal is perfect for a hot summer night. I enjoyed mine for dinner, but it would be a great breakfast to enjoy on the patio in the morning, or even a hearty dessert. You can even experiment with different fruits as they go in and out of season.

This recipe uses strawberries, watermelon, craisins and blueberries to deliver a fruity taste. It’s offset by a grapefruit viniegarette dressing to provide a unique flavor combination of sweet and tart. Drizzled on top is Greek vanilla yogurt for a satisfying yet delicious combination of flavors and textures.

My recipe was changed alittle. I didn’t add Greek yogurt–instead just regular vanilla. And you can omit it all together if you are vegan and still enjoy the flavorful taste combination of the recipe.
