S’Mores

June 28, 2010

Camping and s’mores just go hand in hand. But what do you do when the kids want s’mores every night of the summer?

Let me tell you. It gets a little bit….old. Fast.

Especially when there are so many good summertime treats to enjoy!

This s’more treat is a spinoff of the traditional jell-o s’more treats. The more traditional jello s’more recipes call for miniature marshmallows and mini chocolate chips. I just upped it up a notch and made it a little fancier. We served it at a family function and everyone loved it!

INGREDIENTS

1 4 serving box sugar free, fat free instant chocolate pudding

1 pkg large marshmallows

1 cup graham cracker crumbs, crushed

1/2 cup semi sweet chocolate, cut into coarse pieces

DIRECTIONS

Prepare chocolate pudding according to package directions. Pour chocolate pudding evenly into 4 different cups or dessert bowls and keep in refrigerator until ready to assemble.

Meanwhile, crush graham crackers and chop chocolate. Set aside for later use.

On the stove (or on the grill) roast approximately 2 large marshmallows per person. Once marshmallows are roasted, take pudding cups from the refrigerator. On top of the pudding evenly sprinkle the graham cracker crumbles, than place the two marshmallows on top, and then top with chocolate and remaining graham cracker crumbs if desired.

Serves: 4

To make in larger cups like in the picture above, increase pudding amount to 2 pkgs.
