Sweet Apple Bacon Salad

Again, this one is definetely being added to my “meals made with whatever’s in the fridge” list.

I experimented with this one and found that it actually tasted pretty good.

The lettuce? It’s from my garden. It’s been so neat to not have to rush to the store to get lettuce. I just run out to the backyard and grab what I need. And it’s so delicious!

Ingredients

1 slice Smartlife, turkey bacon, or bacon cooked and crumbled

1/8 cup crumbled bleu cheese

1/2 apple, chopped into bitesized pieces

1 tbsp walnuts (optional)

2 cups spinach or romaine lettuce

Olive oil, vinegar, pepper, and touch of agave nectar, to taste (can substitute balsamic with a touch of agave if desired).

In a bowl, mix together olive oil, vinegar, pepper, and agave to taste.

In a salad bowl, mix together lettuce, bleu cheese, apple, bacon and walnuts. Top with dressing. Toss together until well blended.
