Coconut Macaroons

There are some things that are just good. Coconut macaroons? Good.

This recipe? Great.

Enjoy these delicious mouth watering coconut macaroons. Easy to make. Easy to eat.


2 2/3 cup coconut flakes (I put mine in a blender to mix them more. The kids don’t seem to like coconut flakes much).

2/3 cup sugar or cane sugar

4 tbsp all purpose flour or white whole wheat flour

1/4 tsp salt

4 egg whites

1 tsp vanilla extract

In a mixer, blend together the coconut, sugar, flour and salt. Incorporate the egg whites and vanilla. Mix together ingredients until blended well.

In a pastry bag fitted with a large star tip, place 1/2 of cookie mixture. Squeeze a tablespoon sized amount onto greased cookie sheet.

Or, drop by rounded tablespoons with a spoon onto a greased cookie sheet.

Bake at 325 degrees for 15-18 minutes, or until the cookie becomes lightly browned. Remove from oven and cool on a wire rack. Do not overbake, or cookie will become too hard. Store cookies in an airtight container.

Makes 20 cookies.
