Coconut Almond Cake

So good, so good, so good!!

This gluten free cake is to die for! The cake is light and fluffy with an angel food cake taste and appearance. The white chocolate cream frosting will send you off your diet for a day, but is totally and completely worth every bite!

The coconut and almond combination is perfect for summertime, and while a higher maintenance cake in time, it was worth every bite! (And moment cooking it). This is perfect for taking to parties, or enjoying at home outside watching the kids play and the sun setting.

My friend Jen at made it for a wedding, but made cupcakes out of them instead of the layer cake. You can see pictures here.

Did your frosting not turn out? Good, mine didn’t either. Three times. So instead I brought it to class and we dipped it like a fondue. The cake above used Cherrybrook Vanilla Frosting with coconut flour on the top and toasted coconut on the edges. Rave reviews. I also think it would be good adorned with mangos, pineapple, strawberries and other summery fruits. Mmm…gotta stop. Mouth is watering!!
