Strawberry Waffle Sundaes–Under 300 Calories!
Strawberries and chocolate. The two are just synonymous with each other. They fit.
And they’re delicious when combined!
Oh, and healthy. Strawberries–great vitamins. Chocolate–antioxidants. Never mind the other stuff.
Here are two of my favorite under 300 calorie desserts that combine the two ingredients to create an unforgetable dessert. Unfortunately, you’ll have to pick one or the other. But just looking at the pictures is making my mouth water!!
STRAWBERRY WAFFLE SUNDAES

I loved this picture. I loved the strawberries. And I had a hard time believing that the whole dessert was under 300 calories. When I made it, it was too much, so instead of using the extra waffle, I put the first waffle down, put one scoop of vanilla ice cream on top, placed one small scoop of whipped cream on top, and covered the ice cream and whipped cream in the strawberry mixture than drizzled it moderately 🙂 with chocolate sauce. Mmmmm….
Oh, this also doubles as a fantastic brunch dessert or breakfast idea. Just a hint!
- 1 lb. container fresh strawberries, hulled and sliced
- 2 tablespoons orange juice
- 1 teaspoons sugar
- 2 eggs, beaten
- 1 3/4 cups skim milk
- 1/4 cup canola oil
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 cup whole wheat pastry flour
- 1/4 oatmeal (place in blender or food processor and blend until fine)
- 3/4 cup unbleached all-purpose flour
- 4 teaspoons baking powder
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 9 cups vanilla ice cream
- 6 tablespoons whipped topping
- chocolate sauce, for drizzling
Preheat oven to 200 degrees. In a bowl, mix together the strawberries, orange juice and 1 tsp of sugar. Set the mixture aside and save for later.
Heat waffle maker. While waffle maker is heating, mix together the eggs, milk, sugar, applesauce, vanilla, flours, oatmeal, baking powder, salt and cinnamon until well blended.
Make waffles. After waffles have been taken out of the waffle maker, place them on a plate in a 200 degree oven to keep warm.
To serve the waffles: Place on waffle section on a plate. Top with 1/2-1 cup of ice cream, and 1/2 cup of the strawberry mixture. Place second waffle on top, add a few more strawberries, a tablespoon of whipped topping and drizzle chocolate sauce over all.

CHOCOLATE COVERED STRAWBERRIES
If you’re needing a quick and easy chocolate and strawberry fix, this recipe is the one! It’s full of antioxidants! The great thing about this recipe is you don’t have to just use dark chocolate. You can use any type of chocolate you want. I used dark chocolate, but have used vegan semi sweet chocolate before too and it works just fine.
3/4 cup semi sweet vegan chocolate chips, melted for 1 minute in microwave and stirred until mixture is smooth and creamy.
Dip each strawbery into the chocolate, than hold by the stem while excess chocolate drips off. Place strawberries on waxed paper and allow to cool ten minutes. Refrigerate up to 24 hours. Must be eaten within 1 day of making.
Serving size: 3 strawberries, calories 225, (105 cal. from fat), 12g fat, 7.5g sat fat, 3.5g fiber, 22g sugar, 33.5 carbs
6 oz dark chocolate
3 tbsp half and half
1/2 tbsp butter (unsalted)
In a bowl, combine chocolate and cream. Heat in microwave on high for 1 1/2 minutes, taking mixture out and stirring occasionally. Add the butter and stir until just melted.
Holding the strawberry by the stem, dip each strawberry into the chocolate mixture. Allow the excess chocolate to drip back into the bowl. Place the strawberry on waxed paper to set.
Allow strawberries to set approximately 30 minutes before eating.
1 serving = 3 strawberries
