Smoked Gouda and Pork Tacos

My husband loves tacos. Taco Bell tacos are usually his favorite. The second is just a good old ground beef or shredded beef taco with cheese and lettuce in a yellow corn taco shell. I’ve been making the same old taco for years now. And since we eat them once every other week, I thought I would change it up and see how he liked it. If you’re not a meat eater, don’t worry! I’ve got a great TVP taco meat recipe. Or just use plain TVP instead of the pork and follow the rest of the recipe below.

The combination is wonderful. Delicious corn tortillas mixed with a hint of lime and a hint of smoky flavor from the gouda. This meal is the perfect weekend meal! This meal serves two people. You can double it for more people, but I will warn you that I used the 1 lb of pork and it fed 3 people just fine with plenty of leftovers.

INGREDIENTS

1 tbsp olive oil

1/2 pound ground pork

1 can (10 oz) or approximately 1 cup of fresh diced tomatoes (Drain)

1/2 tsp salt

1 tsp minced garlic

1 tbsp southwest chipotle pepper (just a hint. Start with a tsp of chipotle pepper and move up. Depending on the type of chipotle pepper you are using, you may want to use more or less. It’s up to you and your tastebuds).

1 1/4 cups smoked gouda cheese

Corn tortillas–white or yellow okay

DIRECTIONS

Heat the oil in a large skillet over medium high heat. Add the pork and continue cooking until pork browns. Drain the excess fat, then add the tomatoes, garlic, salt and chipotle pepper. Cook for about two minutes then reduce the heat to simmer and cook for an additional 5-15 minutes until the liquid amount is reduced.

Fill a corn tortilla with pork, then top with cheese. Add shredded lettuce if desired.

    What a great sounding combo! I adore smoked gouda (just OD-ed on it yesterday!). I’ll bet it would be wonderful in tacos! Putting this on my to-try list…
