Apple Balsamic Salad

April 7, 2010

It’s been awhile since I’ve posted a salad recipe, and I was excited to try this one. I love the crispness of the apple mixed with the tangy taste of balsamic. Walnuts add the perfect nutty flavor combination and the feta cheese ties it all in. The salad is easy to put together and tastes great!

INGREDIENTS

2 cups spinach lettuce, washed and chopped into bite size pieces

1/2 apple, cored and cubed into bite sized pieces

1 tbsp chopped walnuts

1/8 cup feta cheese

1-2 tbsp balsamic vinegarette, to taste

In a bowl, place spinach lettuce. Top with chopped apples and walnuts and sprinkle feta cheese over the top. Pour balsamic over salad, enjoy!

I’ve been making “sugared” almonds and walnuts with agave and toasting them in the oven. They are so yummy and make an awesome addition to my many salads!!
